We found that many of our sponsors were not able to use all the seats that came with their sponsorship level as originally set up, and sometimes this happened close to the day of the event. In order to know how many seats were still available we needed to free up these unused sponsor seats and found the process to do that was very complex:

we had to create a new sponsorship level with the smaller number of seats; add that to the sponsor's donations; note the names of the guests, then remove them from the original sponsorship; add them to the new sponsorship; and remove the original sponsorship. And, if payment had been received, we had to jump through the additional hoops of voiding the payment, adjusting the invoice and then re-applying the payment.

It would be MUCH simpler if there was a way to adjust the number of seats on the fly. Is that possible?
